Mayonnaise

Enhance flavor and increase absorption of fat-soluble vitamins using healthy oil condiments.
Ingredients
- 1 whole egg at room temperature or 1 egg yolk at room temperature
- 1 cup avocado oil (substitute extra virgin olive oil for a stronger flavor)
- 2 tbsp vinegar, kombucha, whey, or lemon juice
- ½ tsp Dijon mustard or mustard powder
- ½ tsp salt
Supplies
- 1-quart mason jar and immersion blender or mixing bowl and whisk
Method
Combine all ingredients except oil, then very slowly drip oil in the blend while whisking/blending rapidly till it thickens. Enjoy!
Use within a week and store in an airtight container in the refrigerator.
Variation: Herbal Mayonnaise
Follow basic recipe and add ½ cup fresh herbs such as dill, basil, tarragon, parsley, or aromatic wild greens like beebalm, garlic mustard, or wild onion.
